Fresh Asparagus Soup w/ Dumplings 
This is an old family recipe from my grandmother, Ella Nieweg. My Mom had a big Asparagus patch so she cooked this soup a lot when I was growing up.  My family now enjoys this soup especially the dumplings but there never seems to be enough!

 

 2 ½ c. fresh asparagus (cut into small pieces)                     Dumplings:  2 c. flour

3 med potatoes (small cubes)                                                                      2 eggs

1 small onion (chopped)                                                                                2 tsp baking powder

3 c. water                                                                                                        ¾ c. milk

½ stick butter                                                                             Mix together and set aside.

½ gallon milk

Salt and pepper to taste

 In a large, place vegetables and cover with water.  Bring to a boil, then lower heat and simmer until vegetables are tender.  Add milk, butter, salt and pepper. Bring to a boil and slowly add dumplings by dropping them by teaspoonful into soup. Reduce heat, put lid on and simmer for 10- 15 minutes.      ENJOY!!!
